warming and cleansing soup

Feeling a bit leaden, cold ridden and not really hungry, with a stonking headache only receding when plied with paracetomol, I am avoiding milk. And eating when not hungry. So I reached midday today on mint tea alone, and as my appetite returned my thoughts turned to ginger. Fresh ginger. Very cleansing, very warming and very refreshing. I have to buy some more, as I used mine making this soup. I've just eaten it and my mouth is tingling happily.

Cooks in one pan.

Recipe

Ingredients
1 large carrot
1/2 onion
1 leek
1" ginger
2 cloves garlic
1 egg
soy sauce
1/2 tsp chilli powder
1 tsp powdered vegetable stock
three mugs of water
1 nest of fine rice noodles


Method
Put the water in a pan and bring to the boil.
Peel the carrot and slice thinly. I like to slice mine at an angle.
Slice the onion and leek.
Peel the ginger and garlic, and chop finely.
Add Veg stock to boiling water, followed by 1/2 carrot, onion and leek and 1/2 chopped ginger and garlic, cook for a minute.
Add everything else and cook for two minutes while you beat the egg together with a slosh of soy sauce and the chilli powder.
Pour egg mixture into boiling water with other ingredients, leave for a moment, then stir.

Eat. Mind your mouths it is hot.

Simple curried parsnip soup


Parsnips are a bit weird, they’re the paler, more floury and less attractive relative of carrots. They are nice roasted and in soups, that’s what I like them in, anyway. This is a simple parsnip soup, in my case made from a leftover parsnip.

Ingredients
1 parsnip
1 onion
1 clove garlic
1 mug water
1 mug stock
1 tsp curry paste
1 slug of cream
1 squeeze lemon

§    peel parsnip and cut into chunks
§    peel onion and cut into chunks
§    peel garlic clove
§    put chopped parsnip, onion and garlic clove into pan with water and stock
§    boil together for 10 minutes
§    add curry paste
§    cook for a minute
§    blend with hand blender to a smooth consistency
§    add a slug of cream and squeeze of lemon juice

makes 3 mugfuls or two bowlfuls

tips
if you haven’t got a hand blender cut the veg up small or crush using a masher

one pan coconut dhal





Coconut dhal
This dhal is a staple in our house, it is the first recipe I wrote out for my darling daughter, it's cheap and easy to make and delicious. I included the ingredients when I sent a care package after she told me she'd been living on pot noodle alone, along with a savoy cabbage and a cake. 

Ingredients
Equipment needed
Orange split lentils
Water/stock
1 onion
1 carrot
Garlic
Curry powder
Fresh coriander
1” Creamed coconut
Salt, pepper
1 Tomato

Optional extras
Potatoes
or 1 apple

Wooden spoon
Medium sized saucepan
Mug
Chopping board
Knife
Peel onion and chop up roughly
Peel carrot and slice up
Take one or two cloves of garlic and crush under flat of knife and peel
Take 1 mugful of lentils, put in pan
Add two generous mugfuls of water or stock to pan
Bring to boil and simmer over low heat

You may see some scum start to bubble up – just remove it with the spoon – if you don’t everything will still taste fine

Add chopped onion and carrot
Add 1 tsp curry powder, pinch of salt, pepper and tomato
Cook over low heat until the lentils are getting soft, about 15m
Add creamed coconut, check that there is still enough liquid, if it’s getting dry add some more water and cook 5m more

Add chopped coriander leaves and stir through – check seasoning and add salt if needed

You might like to add a squeeze of lemon

Eat with rice or on its own.


If you want to make this into soup use three mugfuls of water.

My aunt cooks this and eats it with rice. Any leftovers she puts in a pot and then eats spread on toast as pate. Sounds a bit weird? I thought so, and ate it out of politeness, only to discover it is really delicious. She chops everything up much finer than me. Just a little tip.
